Christmas menu inspired by specialties from the South and local producers from the Canal du Midi

Aperitif:

Black olive tapenade bites

  • Ingredients: Black olives from Argeliers, extra virgin olive oil from Mas d'Antonin or Oulibo, capers and anchovies.
  • Preparation: Mix the pitted olives with a drizzle of olive oil, add the finely chopped capers and anchovies. Spread on small toasts.

  • Ingredients: Roquefort de Papillon, walnut kernels from the Orb Valley, puff pastry.
