South, the plain formerly linked to the sea is now crossed by the Canal du Midi. A large garden, endowed with a biodiversity of its own: Large trees rub shoulders with yellow iris, rushes and large loosestrife and create a natural setting for the canal. So you can see swallows, wagtails, orioles or gray herons but also nutria, mallards, moorhens and swans. As for fish, carp, bream and roach cross other varieties, such as predatory predators: pike, pike perch, perch and catfish.

Further north, the hills and valleys take shape mainly covered in vines and scrubland: there are kermes oaks, almond trees, fig trees and wild olive trees. More than anywhere else, perfumes accompany the walker. At spring the scrubland is adorned with a thousand colors: yellow of the Spanish broom and coronillas, white of the asphodels, pink of the cistus, orchids and thyme, blue of the lavender, rosemary and leafless.
