Respect for ancestral uses is here more than a method, a real philosophy. The manual harvest, the careful vinification, the very gentle old-fashioned pressing (hydraulic press), the successive aging of lightning in barrels, the bottling at the domain itself, are the various testimonies.
However, all the most recent technologies in terms of vineyard management or winemaking are used when they make it possible to reinforce the quality of the wines obtained.
This is how we de-stem the harvest, we are equipped with temperature-controlled vats, and our wine is subject to regular analytical and organoleptic monitoring.
